The Silver City Brewery (New Mexico, USA) is flavouring beers with native hops from the local Gila National Forest. These wild hops are collected by the brewery’s staff annually, under a special permit, during a small late summer window which provides only a few days to capture the precious hops. The collected hop blossoms are then vacuum-packed and frozen for use in the brewing throughout the year.
