Another start-up, Air Company (New York City, US), is making vodka in their Brooklyn facility from carbon dioxide. The product is a 40%-proof drink called ‘Air Vodka’ and to date, the company produces 5,000 cases of the product annually. The company takes CO2, collected directly from the air, or captured at source at various industrial facilities, and combines it with hydrogen created through electrolysis (the process where electricity is used to split water into hydrogen and oxygen). The technology utilized merges these elements to create ethanol, which when combined with water becomes vodka. The company is also exploring other non-drinking products with the launch a new fragrance, called Air Eau de Parfum.
